Christmas is one of our favorite times to show off our creative side and logs occupy a central position. This year, our products have been nominated in La Presse + Pause. The article “The best logs of supermarkets” had identified the best options to share this holiday.

On the first category “only fruits” Raspberry Explosion is the winner. The perfect match between the raspberry and the chocolate gets an upgrade with balsamic jam that adds the spark it needed. With a moist raspberry brownie, it is truly a memorable log.

 Another creation in this category with second place: Pear Vanilla, consisting of two layers of our moist vanilla sponge cake with an attractive vanilla mousse made with real Madagascar Vanilla and pear cubes overlying with our homemade caramel cream and almond Joconde cake.

On the category “caramel and cream” our Crunchy Caramel occupied second place, with good reasons. A moist vanilla cake garnished with a chocolate-caramel crunch, light caramel mousse and a core of chocolate-caramel ganache. Creamy, rich and just delicious. 

Saving the best for last, on the category nuts, our first place is Le Rocher, our favorite hazelnut log cake (also one of our best-sellers in a classic format) which departs from a dark chocolate ganache and a silky hazelnut layered with a hazelnut crunch and a hazelnut mousse. Masked with a sumptuous and creamy chocolate ganache with hazelnut pieces and covered in a milk chocolate topping with crepe crumbs. The chocolate hazelnut is always a winner match, whatever the season. 

This year, Jessica Pastries created for the brand Trois fois par jour the log Hazelnut Caramel which won second place in the category “nuts.” The log consists of a moist chocolate brownie garnished with rich chocolate-caramel mousse and creamy sea salt caramel covered in caramel mirror glaze with hazelnut powder. 

Marianne Hallas, our chef, once again demonstrates elegance and virtuosity in these fine creations with the “Jessica touch” which means quality, originality, and uniqueness in this Christmas collection.
